Awaze tibs, a fan favorite, cult classic, and one of the best Ethiopian dishes in my opinion. It also happens to be super easy and quick to make, relying on the quality of your beef, awaze, and ethiopian clarified butter - Nitter Kibbeh. Luckily, Brundo Spices has incredible Nitter Kibbeh and Awaze, so you are in great hands.
I suggest going to a butcher and asking for Sirloin, Ribeye, or tenderloin. I love a good tenderloin, although it tends to be a bit more expensive, it is definitely worth it. You are welcome to marinate your meat in your awaze paste beforehand for deeper, richer flavor, but I have also made it without marinating and it has turned out incredibly delicious.
Enjoy hot with fresh injera, and I promise you, this will become one of your go to dishes! This also happens to be highly customizable, feel free to add in your favorite veggies and even enjoy it with rice (I know the habesha’s gasped! But remember, tibs is a stir-fry dish afterall, and can be enjoyed with your vessel of choice!)
Ingredients:
Awaze paste

Mix ½ cup awaze with alcohol of choice until a thick paste is formed. Salt to taste.

Optional - I like to add lemon zest, juice and grated garlic. This is highly customizable, so add according to your preferences!

1kg beef (tenderloin, sirloin, or ribeye)

1 red onion, sliced

3 cloves garlic, finely diced

1 deseeded jalapeno, julienned

1 tomato, deseeded, sliced

2 tbsp Nitter Kibbeh

1 tbsp of Awaze
-
Salt, to taste

Additional awaze on the side to enjoy
Steps:
- Start by cubing your beef and salting generously. Set your skillet to medium heat and let properly warm for a few minutes.
- Add in your beef and sautee, stirring quickly. We want to move quickly so the meat does not overcook!
- Add in your awaze and stir.
- Add in your onions and garlic and stir.
- Add in your tomato and mix.
- Add in your nitter kibbeh and reduce the heat.
- Close the lid and let veggies finish steaming for 2-3 minutes.
- Finish off with a bit more salt, and jalapeno.
- Enjoy hot with awaze on the side
